exclusively for the Massachusetts Women’s Leadership Summit but got such good feedback about it that I want to share it with all of you! It has 24 quick and easy healthy snack staples plus 5 delicious and healthy recipes to help you lose weight, boost energy, decrease inflammation and that actually taste good, like this one!
Anti-Inflammatory Egg Salad
Eggs are incredibly nutritious and protein-rich, containing small amounts of almost every nutrient your body requires. They have been found to boost HDL (good cholesterol) levels, promote weight loss, eye health and may lower the risk of stroke. This dish can also help lower blood sugar, inflammation and improve sleep quality. This is a great one to make ahead for the busy upcoming work week, so you have a nourishing, protein-rich snack at your fingertips to fuel and energize you!
Ingredients:
- 8 eggs, hard boiled
- 2 tablespoons high quality extra virgin olive oil
- 1/4 teaspoon ground turmeric
- 1 tablespoon Dijon mustard
- 1/4 cup chopped fresh dill
- Sea salt and freshly ground black pepper to taste
Steps:
Combine all ingredients and enjoy in a lettuce wrap or on a healthy cracker/toast. Goes great with a pickle or side of kimchi!
